2 tbs of EVOO

1 can of lentils

1 can of lupini beans

1 jar of home made tomato sauce

1 table spoon of home made hot sauce

1.5 cups of white wine

1 pkg. of ground turkey

2 cups of diced carrots

1 whole diced purple onion

2 cups of spinach

2 cloves of garlic

1 tsp of salt

1 tsp of black pepper

1tsp of garlic powder

1 tsp of thyme

1 tsp of chilli powder

1 tsp of paprika



1. Warm extra virgin olive oil in a deep non stick pan

2. Add onion and sauté until translucent 

3. Add garlic to pan and cook for 1 minute

4. Add carrots and stir then add half the salt and cover to let vegetables cook down

5. Move veggies to one side of the pan to make room for the ground turkey. Add turkey and separate with a wooden spoon and brown before stirring in with veggies

6. Add strained beans and cover for 5 minutes to allow ingredients to cook and combine

7. Add all spices and stir to evenly coat everything 

8. Add wine, hot sauce and tomato sauce, stir and cover, also lower the heat to allow everything to bubble and release their flavours (YUM)

9. 10 minutes before completion add 2 cups of spinach cover and let simmer



Serve in bowls super hot, add some diced basil for freshness and voila the perfect home made healthy stew!
